We had a guest at our house a few months ago who told me that I just HAD to meet his wife. He kept saying that we have so much in common and that we would get along really well. The next day Ami Beach Shadle and I became Facebook friends and I can see what he meant. We do indeed have a lot in common.
Among our many common traits is the deep desire to create delicious, nutritious, vibrant and tempting edibles for ourselves and for others. So, the other day when she posted a recipe on her Facebook page I zipped over to her website to check it out. And all I can say is WOW. I immediately whipped up a batch and it was so easy and delicious that I asked her if I could share it with all of you. I’m glad she said yes.

Raw Vegan Pumpkin Hemp Parmesan “Cheese” Recipe
Move over cashew Parmesan cheese! Here’s a fantastic replacement for both dairy Parmesan and for people with nut allergies. It can be used just like any Parmesan on top of salads, pizzas or anything that you want to give a cheesy flavor.
1 cup raw organic pumpkin seeds
1/2 cup raw organic shelled hemp seeds
Sea salt to taste
Nutritional yeast (optional and to taste)
Place all of the above ingredients in a food processor with an “S” blade attachment and pulse into a Parmesan cheese consistency. It’s really that easy. Store in a glass jar or airtight container and keep cool and dry.
(Note from Katrina: If you’re looking for a healthy alternative to dairy or if you have a nut allergy, here is your answer. I love to sprinkle this on brussel sprouts or a salad. Actually, I sometimes eat it right out of the jar with a spoon.)
