I love this pudding for breakfast. I love this pudding as a snack. I love this pudding anytime. And I feel good about eating it. Why? Because chia seeds are wonderful and nutritious. Even Dr. Oz recommends eating them. So, why are they so healthy for you? Here’s the scoop. Chia seeds have:
• 3x more iron than spinach
• 6x more protein than kidney beans
• 8x more omega-3 than salmon
• 6x more calcium than milk
• 15x more magnesium than broccoli
• 2x more fiber than bran flakes
• 4x more phosphorous than whole milk*
So, how do I eat this amazing superfood? I make a super, simple Chia Seed Pudding. And when I decide I want to eat it for breakfast, I prepare it the night before in a jar and store it in the refrigerator until the following morning. Here’s the easy recipe:
4 tbsp chia seeds
1 cup nut milk of choice
¼ tsp vanilla powder
½ tsp maple syrup (optional)
½ cup blueberries (optional)
Put ingredients in a jar or bowl and mix well. Let stand 10 minutes or overnight. And you have yourself a superfood pudding! Grab a spoon and enjoy!
